Nutrition Scientist and Director of Veggie & Soul and Healthy Life Albany, Dr. Samara Sterling, talks about the benefits of a plant-based diet.
“The benefits of eating a plant based diet are so vast and they’re in the scientific literature. Over 30 years of research has shown that if we eat more plants, we can significantly reduce our risk for many chronic diseases. One of the things we talked about in our class today was that a plant based diet also helps us live longer. Not just to live longer, but also live more fulfilling lives while we’re at it,” said Dr. Samara Sterling, Nutrition Scientist and Director of Veggie & Soul and Healthy Life Albany.
Chef of 229 Vegan, Michael Daniels gives more information about the plant-based meals prepared for the cooking courses.
“Today we sued oyster mushrooms, we made fried chicken. We used macaroni, we made a vegan plant-based macaroni and cheese made out of raw cashews, and also sauteed kale. Some of the other things we used was tofu for tofu scramble. Some other things we did was a black bean burger, a plant-based burger made out of black beans and also quinoa,” said Chef Michael Daniels, Chef of 229 Vegan.
Dr. Sterling talks the upcoming health fair coming to Albany.
“On July 29, from 10 a.m. – 2 p.m., we will be having a health fair. This will be held at the C.W. Heath Park and that’s 1100 North Jordan Street. You can come and learn about how you can take control of your health, by using simple lifestyle behaviors. You’ll also get some free plant based food to try. You will also have some wellness education, there will be bouncy houses for the children. So, it is something I think the whole family will enjoy” said Dr. Samara Sterling, Nutrition Scientist and Director of Veggie & Soul and Healthy Life Albany.
